And what happens after that first email is triggered for non usage (48 hours).
When does the next email trigger? Is it another 48 hours from the last email notification or is it 48 hours after the last activity that would appear in their newsfeed?

The next e-mail triggering happens after 48 hours period ends if you appear online within this period you will be pinged by the software and will get a instant notification. If this is not what you're looking for, please elaborate.
