I still use 1.1.1 (build 3485). Since 1.2.3 has rolled out I have a lot of plugin updates available. But, at this moment I'm not planning to update my platform, but...can I update my plugins?

Firstly, backup your own site. Then, update core and all plugins. If you will update plugins without core update, you will broke your site. Please, be serious about that.
