I did a manual install of v 1.2.3, downloaded latest current Arial theme
and installed the latest photo, video and events plugins.
I'm logged in as admin but I cannot "Add New" photo, video or event. It's happening on all themes.
Any suggestions?

Why you can't add new photo, videos? What error message do you see? More details please :)

I want only the admin to be able to upload videos, photos, add events.
When I change the Standard/Default permissions it also changes admin permissions.
The work around was to set standard permissions to all. Then create a new role with limited permissions and set that as default for signup.

You need to create a separate Role with permissions for uploading photos, videos and etc and give it to admin if you want to give full access to create/view content for admin except others
