I cannot find anywhere in css or where in the css to change the simplicity menu hover color from that light green to my color of choice...
Any help please?

And I take it that for some reason editing the actual CSS file doesnt seem to work well... And the best way is edit them css in admin dashboard.

After doing changes in the files directly, you need to enable dev mode and refresh your site.
