Video thumbnails from embedded YouTube codes appear low quality. (ACtual video after selecting is sharp) Is there a way to get the medium or high quality thumbnail for the embed code?  Is it something I could manually edit in the embed code?

You can check this plugin out. It still works on 1.8.4, but the dev hasn't been here for a bit. It's only $5, and it allows you to choose the thumbnail quality. Note that not all videos have high res thumbnails.
