This is probably staring me in the face, but I cant see it.
if I set the site so guests can see members profiles, is there a way that I can hide the newsfeed activity from the lower half of the page, and just show the profile info?

Sure. All you have to do is to go the profile page seeting (website/admin/pages/user-profile), then click on the gear icon for newsfeed and restrict view for 'guest'.
