It would be nice if the user could limit who could view each item on their profile so if they put a phone number or address they can set it to anyone, just friends, or just the admins (invisible).

Dubz, we don't have this functionality. This requires custom code modifications.
Admin can make such fields private when creating/editing them in admin panel>>profile questions.
So if the field will be set to be visible only on join page and profile edit, other users won't see the private info. It will be visible only to site admin and profile owner.
