If you checked the http://demo.oxwall.org/video, you'd see that all YouTube videos have thumbnails.

If you mean via the video plugin, not easy given it does not "store" the video it simply gives people a way to share ect via embedded code. if a plugin was to steam the video from your site this would be easier to do, but a massive bandwidth use on your site.
it could be an external thumbnail
